Job description

Main Function: Loaf Catering is a social enterprise delivering outside catering for events across Greater Belfast.  Our flagship building Loaf Café on the Grosvenor Road is home to our food preparation and production unit for all outside catering and supply across our 6 Cafes. The Production Manager will have a love of food and will assume overall responsibility for operations across the Café and Corporate Catering, ensuring quality standards are maintained in line with our ‘special recipe’ guidelines.  The successful candidate will provide leadership and management to the site and work closely with our Executive team to develop our products financially, socially and responsibly. 

1. Support and manage the Loaf team to maintain high standards in food production and customer service. 

1. Ensure brand standards are adhered to in line with Loaf’s Operating Manual. 

3. Manage the team including appraisals, staff issues, training, delegate on shift. 

4. Plan rotas to reflect forecasted sales to maintain wage percentage target. 

5. Maintain weekly income generation and GP targets. 

6. Stock control including daily orders, stocktake, managing wastage. 

7. Follow Health & Safety, HACCP & COSHH policies and processes. 

8. Provide direct support to Front of House Supervisor, Cook Supervisor & Corporate Catering Manager. 

9. Motivate and lead staff to drive performance.  

10. Oversee the sales process from production to delivery. 

11. Provide opportunities to support and enhance our participants experience on the Loaf Academy. 

Requirements

Essential:  

Ability to be flexible and adaptable as hours of work will include evenings and weekends as appropriate.  

Ability to supervise staff and work under pressure.  

At least 2 years paid experience managing in a hospitality / food production.  

Experience of managing GP targets against a budget.    


Desirable:  

Cooking / baking experience.

We also have a cafe at the Ulster American Folk Park in Omagh. Loaf Pottery our sixth site is our pottery, pizzeria and coffee shop in Crawfordsburn where we offer wood fired pizzas and our range of beautiful handthrown pottery.
